If I Dream It...

So it has been a long time since I posted last. I have not been very good at taking the time to write things out. I've been side tracked with health, dogs, vacations, work, and baking -- basically life... and well, just haven't stopped to sit and type. However, I've decided I should start to get back to it... I have a few things that I should take time to write out and take pictures again... so give me some time and I'll work on being back more regularly. For now, I just figured I'd show you a little bit of my baking craziness. It all started with a request from a friend's mom. She found a photo in a magazine and asked if I could make it for her. It seemed simple enough - so I said sure. What would result from that - was shocking. I did a practice one, hers, a new practice one with an idea I had to make it look more real... and from there it was order after order. It was a potted cupcake bouquet - pretty and fun. A pot of cupcakes, iced like roses... y...

Ever get tired of the same old dessert? The same old flavors? Chocolate or Vanilla? Now I know, there's lots of ways to accent those flavors and make something absolutely delish! But what if you want something just different? Well there's some flavor combos that I often fall back to - usually it involves a berry or citrus... but I wanted something even more different. Something unique. Something that isn't done all that often that would end up being a nice treat. Now, this may not be super unique for everyone... but it certainly is for me :) I love pistachios but usually it's me cracking the shell and enjoying the nut and upon occasion the pudding... that's usually as far as it goes with me. Not that other things with pistachios aren't just as good - they're just more rare for me... Like pistachio almond ice cream - absolutely love it, but rarely buy it (if I bought it regularly I could easily go through a carton by myself a week... and it may not la...

I enjoy baking - experimenting and creating something yummy. Thing is - I can't eat near as much as I make. Thankfully have have friends and a fiance that helps me make it disappear so it's not wasted. So this time, I experimented with cupcakes... what I have to share with you is a white chocolate, coconut, lime coconut cupcake with a cream cheese frosting. It's a pretty light lime and coconut since some people don't like the strong flavors. You could easily kick them up a notch or two if there's a flavor you like a lot. You could also change the flavors to make your own flavor combo. These were yummy and sweet. I tried decorating with white chocolate hearts, but I used Hershey's Bliss white chocolate squares and it was already a soft chocolate so after a little while they started to melt and fall down onto the cupcake.  All in all, I think they were pretty easy.
