Simple Soups

Ever want something to eat but don't really feel like cooking? If you haven't already guessed from my love of the crock-pot... that hits me now and then :) And sometimes, especially when it's just me, it's hard to get myself in the mood to cook. However, regardless of if I'm in the mood to cook or not - I do have to eat... now I won't lie - sometimes I have ended up having popcorn for dinner because I didn't want to do anything. And so yes, many times what I end up having for dinner is junk food, snacks, and simply munching throughout the night. But sometimes, I still want real food - something more like a meal. Even if it is a lazy one. Baked potatoes are often my go to lazy dinner... next usually comes pasta... But what about when you're tired of those and want something different? Usually my fall back is soup. So here are a couple simple soups I've done. They don't require too much time or too many ingredients. Quick Black Bean Soup ...

Soup in Bread

There's something about a snowy day that makes me want soup... and lets face it - soup is always best out of a bread bowl! And it is odd to think of craving a bread bowl filled with soup in spring - but they're good anytime... and unfortunately, spring hasn't really caught up to us... we're trapped in winter for some reason. Anyways - I digress... soup in bread bowls - yummy! However, I was super lazy with my bread bowls... those were simply a loaf made in the bread machine, cut in half, and hallowed out. I know I could've just had the machine make the dough and bake it and actually make bread "bowls" in the process... but I just didn't feel like it. Granted, I did make a different type of loaf instead of just a white bread. I did a cottage cheese chive loaf... and wrinkle your nose at that all you want but it was super good and went great with potato soup! So today I'll share two recipes with you... one for a very yummy potato soup and the oth...

Tomato Soup Anyone?

I've never been a fan of tomatoes - granted I've always been a picky eater. I've been working on trying new things and have noticed my taste buds have certainly changed over the years. I've always liked pizza and ketchup... but I've never been a fan of spaghetti sauce, tomato soup, or tomatoes. I've still not branched to the spaghetti sauce or tomatoes, but recently I got brave enough to try tomato soup. So many pictures out there looked yummy so it was worth a shot :) But just in case, I added tortellini to it too so that if I hated the soup, I'd be able to fish them out and still have something ready to eat and I wouldn't have to cook a whole new meal. I don't know that the flavors are typical of tomato soup or not, but what I got was yummy. My husband, who likes tomatoes, has never liked tomato soup - and he liked it too... so I think it's safe to say it's not the normal tomato soup, but it's still tomatoes and it's yummy... wh...

Simple Soup with a Twist

At first I wasn't hungry - then I was super hungry. I wanted dinner, but I also didn't want to be sitting there cooking, I wanted food. While staring in my fridge for inspiration, I noticed some tofu that I had purchased last week. I got it wanting to try it - I've never had it. I got it so I'd branch out and try something new, but it's just been sitting there. So when I wanted food now, I figured it might help add some substance to something quick. And what could be quicker than soup? Ok, yes it's getting warmer - but not too warm yet. Plus soup is always good and quick. So with tofu on the brain and the desire for something super quick - hot and sour soup came to mind. I have made it before. It's really simple and quick. Ok, my version is just a spicy egg drop soup because I didn't want everything that is usually in hot and sour. I think it usually has mushrooms which is my main issue... If I remember right, some have meat, I'm pretty sure...
