Crock-Pot Tapioca

Some people love it, others hate it... I must admit I've never met anyone on the fence about their feelings for it... Tapioca. Personally, I love tapioca pudding. I have to be in the mood for it, but there's something oddly comforting about it. Many people don't like it - the ones I know say it's a textual thing...  I don't know why tapioca got me thinking about the drink Oribitz, but it did... so I'm sharing my trip down memory lane too... Much like some people's take on tapioca pudding, people didn't like the texture. And understandably, it seemed odd to have something semi-solid in a drink. For some reason though, I liked it - it was an odd treat in my book. I loved the fruit flavors and the odd little floating balls in each bottle. It intrigued me because it was so different. Cranberry Cherry Breakfast Cookies

Well it's been a long time since I've tried a new flavor of breakfast cookie... almost a year to be exact... but here it finally is. Another yummy treat perfect for a grab and go breakfast or a quick snack. Inspired from my earlier post  tropical breakfast cookie , here's a new flavor combination... Cranberry Cherry :) These oat cookies can be any flavor you like really... Just change the dried fruit and the cup of fruit puree. Start by mixing all the dry ingredients together Then add in your wet ingredients Mix to combine (looks much more normal now doesn't it?) Empty Pantry Brownies

Tonight I was craving something sweet, but didn't have any desserts just sitting around the house... and trust me, there's a reason for that... if it's here - we eat it, if it's not then we really have to want it to make it... and tonight, I really wanted it. So I grabbed a box of chocolate cake mix and figured I'd make brownies with it since brownies sounded better and I didn't have brownie mix. I dumped the box mix into a large bowl and went to grab the oil, just to remember I was out of that. No problem, I have shortening, I'll melt it and use that. Ok, next, the eggs... ooooh wait, out of those too. What was I thinking wanting to bake?! Well, the box was already open so I had to figure something out... Applesauce, no... bananas, no... yogurt, no... hmmmm, ok time to try something new - ground flax seed. I've heard it can be used in place of eggs and that I actually had in the pantry so it was worth a shot. All of a sudden my craving for something...

Refreshing Summer Sorbet

So I had a bunch of strawberries - problem was, I got so many that after I got my fix in, the remaining ones started to just sit in my fridge. I didn't want them to go bad so what could I do with them? I wouldn't eat enough if it was just added to a salad, they'd be too bad before I could finish them. The next thought... sorbet! It's been getting warmer and my windows have been open... what could be more refreshing?! Plus I got a new ice cream maker this winter and I love making new things with it! So I sliced up my remaining strawberries and had a little over 2 cups of slices. I zested a lime and put in the juice from half of it. Added some sugar and a little coconut rum. Tossed it all together and then covered it and let it sit in the fridge over night. I also put my can of coconut milk in the fridge - this way they'd both be cold and when I combined them, they could go right into the ice cream maker instead of back in the fridge to chill. Tropical Breakfast Cookies

So originally I thought I would be sure to do something crafty first... but lets face it, I spend a lot of time in the kitchen... I have never been a big breakfast person, but I'm trying to eat healthier and they say breakfast is very important. So I wanted to find a grab-and-go type breakfast option (or snack). I've been making oatmeal at my desk so the first thing that came to my mind was oatmeal cookies - a healthy kind. So I set my mind to figuring out a tropical oatmeal cookie - something that wouldn't be too sweet and would be at least kind of filling... and the Tropical Breakfast Cookie was born. It took some extra chopping since I only had whole almonds and decided on tropical dried fruits (pineapple, papaya, and mango -- yummy!). But other than that it was very easy.
