Jello Shot Fun

So for the longest time I've been admiring all the amazing jello shots online - they get so creative, so pretty, and look soooooo good!! And I finally broke and decided it was time to try making some of my own :) They're not gorgeous or amazing - simply my first attempt... some day I will try them again. See if I can make the fancy ones... but these were still good. A few surprisingly strong. However, I must admit I got a little over zealous this time around. Made way too many... But they were still pretty good :)

So here were my fun jello shot creations... In the order I made them...

Strawberry Pineapple Jello Shots

3          oz      Strawberry Jello
1 1/4    tsp     Unflavored Gelatine
1          Cup   Boiling Water
1 1/4    Cup   Chilled Coconut Rum (divided)
1 1/4    Cup   Pineapple Juice (divided)

In medium bowl mix strawberry jello with boiling water until jello is completely dissolved. Mix in 1 cup chilled coconut rum and pour into your baking dish. Place in refrigerator until jello sets (about two hours).

Bring 1/2 cup pineapple juice to a boil. Mix unflavored gelatine with hot pineapple juice and stir until completely dissolved. Mix remaining pineapple juice with chilled rum so that the mixture is cold. Stir in the cold mixture and pour over the top of the strawberry mixture (if it hasn't set enough, or your new mixture is still hot, you'll see it start to lift).

Place back in fridge and chill until set.

Dip the bottom of the pan in hot water, cut jello into squares for individual servings, and enjoy.

Blackberry Jello Shots

.3       oz         Blackberry Fusion Jello (a combo of blackberry and raspberry)
2        Cups    Boiling Water
1/2     Cup      Chilled Raspberry di Amore Liqueur
6        oz         Blackberries

In medium bowl stir jello and boiling water together until jello is completely dissolved. Stir in chilled liqueur.

Lightly grease your silicone mold and wipe away the excess grease. Place mold on a cookie sheet.

Pour jello into mold and refrigerate until solid.

If they don't pop out easily, set the mold in a little warm water to loosen them.

Slice blackberries in half to top each jello shot with.

Creamsicle Jello Shots

6            oz          Orange Jello
4            Cups     Boiling Water (divided)
1/2         Cup       Cold Water
3/4         Cup       Whipped Vodka (room temperature)
3 1/2      pkg        Unflavored Gelatine
12          oz           Evaporated Milk
1 1/2      Cups      Sugar

Jello Layer:
In medium bowl mix together orange jello, 1 1/2 packages unflavored gelatine, and 2 1/2 cups boiling water until jello is dissolved. Stir in whipped vodka.

Milk Layer:
In a saucepan, mix your evaporated milk and sugar over medium heat. Add in 1 cup boiling water (it can be room temp - I had boiling water in my teapot still and it went pretty quick using the hot water. Stir until sugar is dissolved and remove from heat.

Put your cold water in a small bowl. Sprinkle 2 packages of your unflavored gelatine. Allow it to sit for 2 - 3 minutes so that your gelatin can bloom. Add 1/2 cup boiling water to dissolve the gelatine. Combine the gelatine mixture with your milk mixture.

Jello Shots:
In your molds or glass dish, start with pouring a thin jello layer. Place in fridge until set (15 - 20 minutes).

Pour a thin milk layer, and place in fridge to set.

Repeat layering (starting and ending with jello) and refrigerate over night to be sure it's fully set.

Margarita Jello Shots

.3         oz         Sugar Free Lime Jello
1          Cup      Boiling Water
1/2       Cup      Tequila
2          Tbl       Triple Sec
2          Tbl       Lime Juice

In small bowl, mix together jello and boiling water until jello is dissolved.

Put tequila, triple sec, and lime juice in a shaker with ice and shake to mix and chill. Pour into jello mixture.

Pour jello into mold or glass dish and chill to until set. Garnish with lime slice if desired.

Cherry Lemonade Jello Shots

10                     Lemons
3          oz         Cherry Lemonade Jello

1          Cup      Boiling Water
1/2       Cup      Cherry Vodka
1/2       Cup      Cold Water

Prepare you lemons by cutting them in half and hallowing the rinds. I did this by juicing the lemons and then peeling out the skins. I then mixed the juice with some sugar and water to make a yummy lemonade -- no reason to waste anything :)

Place the lemon rinds in a cupcake pan to make them steady.

Mix the jello in with the boiling water until dissolved. Slowly add in the vodka and cold water - stirring to combine.

Pour jello mixture into each rind and refrigerate overnight.

Carefully slice each half into either thirds or quarters.
